Verified once, by a registered nutritionist.
Every ingredient in the Canoli library is checked by a registered nutritionist against a published source before it ships. That is a vetting of our library, not an ongoing review of what you upload.
Compound interest, for food development
Food teams run trial after trial, and most of what they learn evaporates between the bench and the spec. Canoli keeps the recipe, the reasoning and the result together.
One month free. No card needed.
Nutrition and compliance recalculate as you formulate, so you find out at the bench rather than at the label stage.
These are real nutritional scores. Drag an amount and the same engine that scores our customers' recipes scores this one, against the verified library.
How are they scored? Read the method.
Passes HFSS on an NPM score of 0. The threshold for food is 4.
Could not reach the scorer, so these figures are from your previous amounts. Move a slider to try again.
Whether the restrictions bind you directly or reach you through the retailer, the score is set at formulation, months before anyone asks for a label.
The rule
Directly if you're over 250 employees. Through your customers if you're not.
Your buyer
No TV before 9pm, no paid online ads, and in Wales and Scotland no multibuy, aisle ends or checkouts.
Your recipe
The decision is taken at the formulation stage (or at the kitchen bench), months before anyone asks you for a label.

Score HFSS on the nutrient profiling model and the product loses multibuy, aisle ends and checkouts in every qualifying Scottish store.
Binds retailers with 50 or more employees, in stores over 185.8 square metres.

Why this exists
Every part of this exists because someone stood at a bench with their hands full, learned something that mattered, and had nowhere to put it.
Now every version is kept, and every one is yours to build on.
Version history depends on your plan.
2,703 ingredients in our library have been verified by a registered nutritionist against published UK and EU sources, and we are still working through the rest. Upload your own from a supplier spec and we use the values exactly as given.

Upload an ingredient from a supplier spec and we use the stated values exactly as given. We never quietly substitute our own.
CoFID and named EU datasets, each attributed on the ingredient it feeds. You can show a retailer where a number came from.
We score NPM 2004/05 and NPM 2018 on the same recipe, so a reformulation can be checked against the model that applies to you. Where an ingredient has not been classified for an input a model needs, we withhold that score rather than assume a zero.
Privacy and security
A recipe is the thing your team spent months getting right. If we are asking you to trust us with it, we owe you plain answers about what happens to it inside Canoli.
Read the full trust page, signed by our founderRecipe chat and ingredient-from-photo run on Anthropic and OpenAI under no-training terms, and both delete request data after a short period (7 days and up to 30 days). Your recipes never train any model, ours or theirs.
Every database query is scoped to your organisation in code, and that boundary is covered by an automated test suite. If a change ever broke that separation, our own tests would stop it before it went live.
No ads, no analytics sold on, nothing passed to marketers. We make our money from subscriptions.
We publish our method
Most tools hand you final scores and nothing else. Ours is built on published best practice, government and scientific standards, and every figure can be traced back to its source and the maths that produced it. Nothing is hidden behind the number.
Read the methodBuilt on standards
UK and EU regulation, McCance and Widdowson, EuroFIR and the scientific literature. Where we had to choose, the method says why.
Every score traceable
From the score back to the ingredient, the database it came from and every factor applied on the way. A buyer's question has an answer.
Published, not hidden
The full method is on our site for anyone to read, and it stays there for the life of every spec you export.

The teams shaping how Canoli works.

In build
Today you formulate on the web and write up what happened afterwards, if you write it up at all. The Canoli app puts the recipe in your hand at the bench: batch-scaled weights, timers, live nutrition when you go off plan, and a voice note when both hands are covered.
A kitchen is a loud room, and a voice note is not always the answer. Most benches still run on a sheet of paper covered in biro: photograph it, and the app reads the weights, times and temperatures off it and logs each one against the trial, with the photo kept attached so you can check what it read. It is the same extraction that reads a supplier spec sheet into an ingredient today, pointed at your handwriting instead.
None of it stays on the phone. Every weight, note and photo lands on the same trial in the web app, so the rest of the team sees it as it happens rather than at the end of the week.
Designs from the current build. iPhone and iPad, in development now, and included on every plan when it lands.
Unlimited users on every plan. You pay for what you build.
When the month is up your account becomes read-only rather than billed: your recipes stay exactly where they are, and nothing is charged because we never took a card. We send two reminders before it ends, and you can subscribe whenever you are ready.
