Every ingredient in the Canoli library is checked by a registered nutritionist against a published source before it ships. That is a vetting of our library, not an ongoing review of what you upload.

Your suppliers' numbers, respected.

Upload an ingredient from a supplier spec and we use the stated values exactly as given. We never quietly substitute our own.

Every value carries a named source.

CoFID and named EU datasets, each attributed on the ingredient it feeds. You can show a retailer where a number came from.

Both HFSS models, or neither.

We score NPM 2004/05 and NPM 2018 on the same recipe, so a reformulation can be checked against the model that applies to you. Where an ingredient has not been classified for an input a model needs, we withhold that score rather than assume a zero.

Privacy and security

Your recipes are yours.

A recipe is the thing your team spent months getting right. If we are asking you to trust us with it, we owe you plain answers about what happens to it inside Canoli.

We do not train AI on your recipes.

Recipe chat and ingredient-from-photo run on Anthropic and OpenAI under no-training terms, and both delete request data after a short period (7 days and up to 30 days). Your recipes never train any model, ours or theirs.

We do not share data between customers.

Every database query is scoped to your organisation in code, and that boundary is covered by an automated test suite. If a change ever broke that separation, our own tests would stop it before it went live.

We do not sell or mine your data.

No ads, no analytics sold on, nothing passed to marketers. We make our money from subscriptions.

Where it lives
Nuremberg, Germany. An ISO 27001 certified facility. Your stored data stays in the EU, and the UK's adequacy arrangement with the EEA means a UK customer needs no extra transfer safeguards. AI features send the content of each request to US providers under Standard Contractual Clauses.
In transit, at rest
TLS 1.2 or 1.3 on every public endpoint. Customer data sits on an encrypted volume.
Backups
30 days rolling, age-encrypted before they leave the server. The storage provider only ever sees ciphertext.
Getting out
Export any recipe to CSV or PDF at any time. No queue, no lock-in.

The bench is where the learning happens.

Today you formulate on the web and write up what happened afterwards, if you write it up at all. The Canoli app puts the recipe in your hand at the bench: batch-scaled weights, timers, live nutrition when you go off plan, and a voice note when both hands are covered.

A kitchen is a loud room, and a voice note is not always the answer. Most benches still run on a sheet of paper covered in biro: photograph it, and the app reads the weights, times and temperatures off it and logs each one against the trial, with the photo kept attached so you can check what it read. It is the same extraction that reads a supplier spec sheet into an ingredient today, pointed at your handwriting instead.

None of it stays on the phone. Every weight, note and photo lands on the same trial in the web app, so the rest of the team sees it as it happens rather than at the end of the week.
